Kale Salad is usually not what most go for in salads but I'm telling you, Kale is filling and full of happy nutrients your body will love! What I love most about this salad is the versatility as a side or main course. I tried this salad with some leftover cod fish from a restaurant and also my own homemade chicken. It was great with both but my favorite was the chicken! Dezi Kale Salad Recipe with Lemon Dressing:
3 Handfuls of Kale (tip: massage your kale in any type of oil to make the leaves softer, and/or massage in lemon juice to break down leaf to "steamed spinach" type of feel) 1 Handful of Arugula 1/4 cup of Cucumber 1/4 cup of yellow peppers chopped 1/4 cup of orange peppers chopped 1 handful of grape tomatoes chopped in half 1 cup of coleslaw mix (from the bag) Garlic and Herb goat cheese Lemon Dressing [ inspired by recipe from spendwithpennies.com ] 1/4 cup olive oil 2 tbsp of lemon juice 3 tbsp red wine vinegar 1 clove of minced garlic or half a teaspoon if out of the jar 1/2 tsp dried oregano 1/4 tsp salt 1/8 tsp ground black pepper about 1 tsp of honey A pinch of poppyseed (optional) |
