So whose hungry?! I am working on a project that is super top secret! However I can share some parts of it including this recipe. It includes kale, sweet corn, bell pepper, onions, garlic and crushed tomato. I used this as a side dish but if you're a die hard vegan...you can have this as a meal.
I think it's important to add whatever your favorite veggies are. The whole purpose of these dishes is to get more healthy veggies in my diet especially superfoods like kale. The fun part is making healthy taste great!
Every recipe I post from now on I will list the exciting health benefits of some the main ingredients. God made everything we need to be healthy!
Kale helps improve vision, is anti-inflammatory, and is loaded with Glucosinolates which help prevent certain types of cancer,
Chickpeas help with skin protection, lowers cholesterol, and is loaded with fiber with a low calorie count which means it is great if you're trying to lose weight.
As far as technique, I just tossed in onions first for a about a minute and then tossed in the rest of the veggies and chickpeas with some Algae Oil. I cooked them for a few minutes before adding the spices, then finally the tomatoes. This first time I left the bell peppers pretty big but next time I'll chop them more finally. Even in salads I seem to never like pepper too big even though it looks nice.
